• 1 tablespoon olive oil

  • 1 medium onion, finely diced

  • 2 cloves garlic, finely diced

  • 2 tablespoons Tierra Ibiza Spice Blend

  • 1/2 kg fresh tomatoes

  • 1/2 tablespoon balsamic vinegar

  • 250g Spaghetti of your choice

  • salt & pepper to taste

For the pasta fill a large pot with water, season with salt and bring to a boil.
Meanwhile heat olive oil in a saucepan over medium-high heat. Sautée onion until translucent. 
Add garlic and roast until fragrant. Add Tierra Ibiza spices, fresh tomatoes and the vinegar. 
Season with salt & pepper according to taste. Let cook for about 15-20 mins. at a low temperature.
Add Spaghetti to your cooking water and cook until “al dente”. You still want a little of a bite to it.
Once the pasta is ready, reserve one cup of the cooking water and keep it aside. Drain the pasta, 
stir into your sauce and add a splash of the cooking water to bind it all together nicely. Enjoy!
