  • 3 cloves garlic

  • 3 cm fresh ginger

  • 3 cm fresh turmeric 

  • fresh red Thai chilies according to taste (optional)

  • 2 tablespoons Thai Treasure Spice Mix

  • 300 ml coconut Milk

  • 2 carrots, peeled and cut in small sticks or rounds

  • 1/2 head of broccoli, cut into small florets

  • 2 cups of mushrooms, thinly sliced

  • 1 lime freshly squeezed

  • 1/2 cup fresh cilantro or thai basil leaves, trimmed 

  • salt & pepper to taste

In a small blender blend garlic, ginger, turmeric, Spice Mix, chilli, and just a bit of coconut milk (to have enough liquid to blend) to a thick paste. Roast the paste in a pan / wok until fragrant. Add your vegetables and the rest of the coconut milk. Simmer at low temperature until all vegetables are done. Season to taste with salt & pepper, garnish with fresh cilantro or thai basil leaves, drizzle with fresh lime juice and serve with Basmati Rice.
