NAMASTE AFRICA // “MISIR WAT” EHIOPIAN SPICED LENTILS

Ingredients:

  • 1 tablespoon olive oil

  • 1 medium onion, finely diced

  • 2 cloves garlic, finely diced

  • 2 tablespoons tomato paste

  • 2 tablespoons Namaste Africa Spice

  • 2 cups peeled tomatoes

  • 1 cup red lentils, thoroughly rinsed

  • 1,5 cups veggie stock

Instructions:
Heat olive oil over medium-high heat. Sautée onions until lightly colored. Add garlic and spices
until fragrant. Add tomato paste, tomatoes, let cook for a few minutes. Add lentils and veggie
stock and let simmer about 30 mins until lentils are soft and liquid has absorbed. Traditionally served with Ethiopian Injera Bread. If this is not available to you, try Indian or Middle Eastern flatbread! Enjoy!
