AYURVEDIC HEALING // INDIAN DAL SOUP

Ingredients:

  • 1 tablespoon olive oil

  • 1 medium onion, finely diced

  • 2 cloves garlic, finely diced

  • 3 cm fresh ginger, peeled & grated

  • 5 cm fresh turmeric, peeled & grated

  • 2 tablespoons Indian Curry Spice Mix

  • 2 cups peeled tomatoes

  • 1 cup red lentils, thoroughly rinsed

  • 1,5 cups coconut milk


Instructions:
Heat olive oil over medium-high heat. Sautée onions until lightly colored. Add garlic, turmeric
and spices until fragrant. Add tomatoes and let cook for a few minutes. Add lentils and coconut 
milk and let simmer about 30 mins. until lentils are soft. Enjoy!
